Back-to-Basics Cooking Classes

August 23rd Fermentation Basics.
This class will explore basic lacto-fermentation techniques for
preserving the fall harvest. We will be making a basic sauerkraut,
kimchi (Korean spicy mix), fermented beets, sauerreuben (turnips with
caraway), and gingered carrots. We will discuss the techniques,
equipment, and tips for making perfectly fermented, healthful

September 20th, Canning 101.
We will discuss and demonstrate basic water-bath canning techniques for
tomatoes and other later-season harvest items. This class will
demonstrate every step of the canning process, from beginning to end.
Participants will actively help to prepare their own jar of goodies,
depending what is in season that week at the local farmer's markets.

October 18th, The
Home Dairy. Come and learn to make basic,
healthful dairy products at home using excellent ingredients. We
will prepare yogurt, 30 minute mozzerella, "farmer" cheese, kefir, and
whatever else our time together allows. Come take the mystery out
of preparing these healthful products at home! $20, 6:30-8:30pm,

November 15th, Natural Foods Cooking
with "Whole Food" Ingredients. We will explore
healthy, easy recipes using grains and beans. We will discuss
sprouting and soaking for good health and nutrition, as well as recipes
to maximize taste. We will make flourless flax crackers, quinoa
cakes, lentil loaf, basic granola pie crust, and lacto-fermented
